Icewine is a rare and exquisite treasure.
Grapes are naturally frozen on the vine in canada's frigid winter and then harvested and pressed. To make icewine, the grapes are left on the vine until after the first frost hits. they must be picked late in the year-after november 15; early in the day-before 10 a.m; and temperatures must not be higher than minus 8 .
At this temperature the grapes are frozen and as hard as marbles. while the grape is still in it's frozen state they are pressed. this leaves a highly concentrated juice, very high in acids, sugars and aromatics.
The wine vinted from this sweet, concentrated juice has a luxurious flavour that is one of canada's special gifts to the world.
